Ingredients
  

For the Bread:
  • ¾ cup granulated sugar
  • ½ cup whole milk
  • ½ cup vegetable oil
  • 1 large egg
  • teaspoon pure vanilla extract
  • teaspoon almond extract
  • 2 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • ¼ teaspoon salt
  • 3 cups maraschino cherries halved
For the Cherry Glaze:
  • 1.5 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • teaspoon almond extract
  • 2 tablespoons unsalted butter melted
  • cup maraschino cherry juice

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together sugar, milk, oil, egg, vanilla, and almond extract.
  3. In another bowl, whisk flour, baking powder, and salt.
  4. Add dry ingredients to wet and mix until just combined.
  5. Fold in the maraschino cherries.
  6. Pour batter into the prepared pan.
  7. Bake for 55–60 minutes, or until a toothpick comes out clean.

Notes

  • Drain cherries well to avoid adding excess liquid to the batter.
  • For a finer texture, chop cherries instead of halving.
