Method
- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
- In a large bowl, whisk together sugar, milk, oil, egg, vanilla, and almond extract.
- In another bowl, whisk flour, baking powder, and salt.
- Add dry ingredients to wet and mix until just combined.
- Fold in the maraschino cherries.
- Pour batter into the prepared pan.
- Bake for 55–60 minutes, or until a toothpick comes out clean.

Notes
- Drain cherries well to avoid adding excess liquid to the batter.
- For a finer texture, chop cherries instead of halving.
