Ingredients
  

  • 1.5 cups cold leftover mashed potatoes
  • 1 large egg lightly beaten
  • ¼ cup real bacon bits
  • ¾ cup shredded cheddar cheese
  • tablespoons chopped Italian parsley
  • ½ cup dry bread crumbs
  • Oil for deep frying

Method
 

  1. Let mashed potatoes sit at room temp for 30 minutes.
  2. Mix in egg, bacon bits, cheese, and parsley until well combined.
  3. Roll into 1-inch balls and coat with bread crumbs.
  4. Chill in the fridge for 15–30 minutes.
  5. Heat oil to 375°F (190°C) and fry balls in batches until golden.
  6. Drain on paper towels and serve hot.
