Ingredients
  

  • 2 1/2 pounds meatloaf mix
  • 1 tablespoon olive oil
  • 1 cup diced onions
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1 1/2 tablespoons chopped garlic
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup chicken broth
  • 3/4 cup breadcrumbs
  • 2 eggs beaten
  • Brown gravy for serving

Method
 

  1. Preheat oven to 350°F.
  2. Heat oil in a skillet over medium heat. Add onions, salt, and pepper.
  3. Cook until soft and caramelized.
  4. Stir in garlic, thyme, tomato paste, and Worcestershire sauce. Mix well.
  5. Pour in chicken broth and stir. Simmer for 1 minute. Remove from heat and cool.
  6. In a large bowl, combine meatloaf mix, breadcrumbs, and eggs.
  7. Add cooled onion mixture.

  • Meatloaf mix often contains beef, pork, and veal—but you can substitute all ground beef if preferred.
