Mexican Street Corn Cups is a Mexican street food made with corn kernels mixed with mayonnaise, sour cream, lime juice, chili powder, and Cotija cheese. Served warm in a cup and topped with Tajín and cilantro, it’s a quick and irresistible snack or side dish.

Ingredients
  

  • 4 cups corn kernels frozen, canned, or grilled
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/2 cup crumbled cotija cheese plus more for topping
  • 2 tbsp lime juice about 1 lime
  • 1/2 tsp chili powder or to taste
  • 2 tbsp chopped cilantro optional
  • Tajin seasoning for garnish (optional)

Method
 

  1. Cook or heat the corn. Char in skillet if desired.
  2. In a bowl, mix corn, mayo, sour cream, lime juice, and chili powder.
  3. Stir in most of the cotija cheese.
  4. Spoon into cups. Top with cheese, chili/Tajin, and cilantro.
  5. Serve warm with lime wedges.

Notes

  • Frozen or canned corn works great—just be sure to drain well.
  • Cotija can be substituted with feta if needed.
  • For extra heat, add diced jalapeños or hot sauce to the mix.
