  • 3 to 4 ripe bananas frozen is fine—just thaw first
  • cup melted butter
  • 1 large egg
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • cups all-purpose flour

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a 5×9-inch loaf pan.
  3. Peel and mash the bananas in a large bowl.
  4. Stir in the melted butter, then add the egg, sugar, vanilla, baking soda, and salt. Mix well.
  5. Add the flour and stir just until combined.
  6. Pour the batter into the prepared pan and smooth the top.
