- In a large bowl, mash bananas and stir in egg, vanilla, both sugars, and cinnamon.
- In a separate bowl, whisk flour, baking powder, baking soda, and salt.
- Add dry ingredients to banana mixture; stir until just combined.
- Fold in melted butter or applesauce.
- Pour into loaf pan and bake at 350°F (175°C) for 35-45 min, or until a toothpick comes out clean.

Notes
