Ingredients
  

  • 4 bananas mashed (about 1⅓ cups or 320 g)
  • 1 large egg
  • 1 tbsp vanilla extract 15 ml
  • 3 tbsp light brown sugar 38 g
  • 2 tbsp granulated sugar 25 g
  • 1 tsp ground cinnamon 2.6 g
  • 1 tsp baking powder 4 g
  • 1 tsp baking soda 5 g
  • ½ tsp salt 2.5 g
  • cups all-purpose flour 180 g
  • 2 tbsp unsalted butter melted (or 30 g applesauce)

Method
 

  1. Grease a 9×5" loaf pan and line bottom with parchment.
  2. In a large bowl, mash bananas and stir in egg, vanilla, both sugars, and cinnamon.
  3. In a separate bowl, whisk flour, baking powder, baking soda, and salt.
  4. Add dry ingredients to banana mixture; stir until just combined.
  5. Fold in melted butter or applesauce.
  6. Pour into loaf pan and bake at 350°F (175°C) for 35-45 min, or until a toothpick comes out clean.

Notes

• Overripe bananas (with brown spots) give the best flavor and moisture.
