Ingredients
  

  • 3 ripe bananas
  • 50 g unsalted butter
  • 1 teaspoon baking soda
  • Pinch of sea salt
  • ½ to 1 teaspoon ground cinnamon optional
  • ⅓ to ½ cup coconut sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup coconut flour

Method
 

  1. Preheat oven to 180°C (350°F). Line a loaf tin with greased baking paper.
  2. Mash the bananas in a large bowl until smooth.
  3. Melt the butter and pour it into the mashed bananas.
  4. Stir in baking soda, salt, cinnamon (if using), and coconut sugar.
  5. Whisk the eggs in a small bowl, then add to the banana mixture.
