Moist & Healthy Protein Banana Bread

This tender banana bread is made with ripe bananas, protein powder, and Greek yogurt for extra moisture and nutrition. It’s naturally sweetened with maple syrup and applesauce, with an option to add peanut butter or nuts for extra texture and flavor. Guilt-free, nourishing, and totally satisfying!

Ingredients
  

  • 3 ripe bananas mashed (about 1 ½ cups)
  • ½ cup unsweetened applesauce
  • ¼ cup maple syrup or your favorite sugar substitute
  • ¼ cup melted coconut oil or vegetable oil
  • 2 large eggs or egg substitute
  • ½ cup Greek yogurt or cottage cheese
  • 1 tsp vanilla extract
  • 2 scoops about ½ cup vanilla or chocolate protein powder
  • cups oat flour or whole wheat flour
  • 1 tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup chopped walnuts or pecans optional
  • ¼ cup peanut butter optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, mash bananas.
  3. Add applesauce, maple syrup, oil, eggs, yogurt, and vanilla.
  4. Stir until smooth.
  5. Add protein powder and mix until no lumps remain.
  6. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  7. Stir dry ingredients into the wet mixture until just combined.

Notes

  • Use spotty, overripe bananas for the best flavor and natural sweetness.
  • If your protein powder is already sweetened, you may reduce the maple syrup.
  • Greek yogurt keeps the bread moist and adds protein, but cottage cheese works well too!
