Ingredients
  

  • 1.5 pounds pork shoulder thinly sliced
  • 1/2 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons palm sugar or brown sugar
  • 3 cloves garlic
  • 2 coriander roots or cilantro stems
  • 1/2 teaspoon white pepper
  • 1 tablespoon tapioca starch
  • Bamboo skewers soaked

Method
 

  1. Blend garlic, coriander root, and white pepper into a paste.
  2. Mix paste with coconut milk, soy sauce, oyster sauce, fish sauce, and palm sugar.
  3. Marinate pork slices with sauce and tapioca starch overnight.
  4. Skewer the pork slices.
  5. Grill over medium heat, brushing with marinade, until caramelized.
  6. Serve hot with sticky rice.

Notes

  • The longer marination gives the pork deep flavor and helps tenderize it.
  • Coconut milk keeps the meat moist and adds a mild sweetness. Avoid using thick coconut cream.
  • Grill over medium heat to avoid burning the sugar in the marinade before the pork cooks through.
