Ingredients
  

  • 2 tbsp olive oil
  • 3 –4 medium carrots diced (1.5 cups)
  • 3 celery ribs diced (1 cup)
  • 1 lb baby red potatoes diced (3 cups)
  • 1 medium sweet onion diced
  • 3 –4 garlic cloves minced
  • 1 tbsp fresh thyme or 1 tsp dried
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 lb chicken breasts or 2 cups shredded rotisserie chicken
  • 5 cups low-sodium chicken broth
  • 1 large lemon juiced (3 tbsp)
  • ½ cup fresh parsley chopped
  • 2 cups baby spinach optional

Method
 

  1. Chop carrots, celery, potatoes, and onion. Mince garlic.
  2. Heat oil in a large pot. Sauté vegetables 6–8 minutes until softened.
  3. Add garlic, thyme, salt, and pepper.
  4. Add chicken and broth.
  5. Simmer 20–25 minutes until potatoes are tender and chicken is cooked through.
  6. Remove chicken, shred, and return to pot.

Notes

  • Rotisserie chicken makes this recipe even faster.
  • Add a pinch of red pepper flakes for a little heat.
