Method
- Chop carrots, celery, potatoes, and onion. Mince garlic.
- Heat oil in a large pot. Sauté vegetables 6–8 minutes until softened.
- Add garlic, thyme, salt, and pepper.
- Add chicken and broth.
- Simmer 20–25 minutes until potatoes are tender and chicken is cooked through.
- Remove chicken, shred, and return to pot.

Notes
- Rotisserie chicken makes this recipe even faster.
