Ingredients
  

  • 2 cups old fashioned oats
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon salt
  • 1 cup unsalted butter melted and cooled
  • 1 cup granulated white sugar
  • ½ cup light brown sugar
  • 2 large eggs

Method
 

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper or silicone liner.
  2. Pulse oats in a food processor until partially ground.
  3. In a large bowl, combine oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, melt butter. Stir in white sugar and brown sugar. Let cool slightly.
  5. Add eggs one at a time, mixing well after each.
  6. Stir dry ingredients into wet until combined.
  7. Scoop 2 teaspoons of dough onto prepared sheet, leaving space between cookies.

Notes
