Method
- Heat 2 tablespoons olive oil in a pan over medium heat.
- Add onions and cook until softened.
- Season chicken with salt and pepper.
- Add to pan and cook until browned. Stir in garlic and cook 2 minutes.
- Push chicken aside. Add remaining olive oil and rice.
- Cook 2–3 minutes until lightly golden.
- Add broth. Bring to a boil, stir, then reduce heat.

Notes
- You can swap cheddar for mozzarella or Monterey Jack.
- For extra creaminess, stir in a splash of heavy cream before adding the cheese.
