One Pan Cheesy Chicken Broccoli – Rice

This One-Pan Cheesy Chicken Broccoli Rice is creamy, comforting, and comes together in just 30 minutes. Tender chicken, fluffy rice, fresh broccoli, and melted cheddar make it a family favorite with minimal cleanup!

Ingredients
  

  • 3 tablespoons extra virgin olive oil divided
  • ½ medium yellow onion diced
  • 1 pound boneless skinless chicken breasts cut into bite-sized pieces
  • 2 cloves garlic minced
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground pepper
  • 1 cup uncooked extra-long grain white rice
  • 1 large bunch fresh broccoli cut into florets
  • cups low-sodium chicken broth
  • 1½ to 2 cups extra-sharp cheddar cheese shredded

Method
 

  1. Heat 2 tablespoons olive oil in a pan over medium heat.
  2. Add onions and cook until softened.
  3. Season chicken with salt and pepper.
  4. Add to pan and cook until browned. Stir in garlic and cook 2 minutes.
  5. Push chicken aside. Add remaining olive oil and rice.
  6. Cook 2–3 minutes until lightly golden.
  7. Add broth. Bring to a boil, stir, then reduce heat.

Notes

  • You can swap cheddar for mozzarella or Monterey Jack.
  • For extra creaminess, stir in a splash of heavy cream before adding the cheese.
