Ingredients
  

  • 3.5 boneless skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic minced
  • 1 cup grated Parmesan cheese
  • 2.5 tbsp extra virgin olive oil
  • 2 tsp dried Italian herbs oregano and basil
  • Salt and pepper to taste

Method
 

  1. Preheat Blackstone griddle over medium-high and drizzle with olive oil.
  2. Pat chicken dry and season both sides with salt, pepper, and Italian herbs.
  3. Cook chicken 5–7 minutes per side, until golden brown and fully cooked (165°F inside).
  4. Reduce heat slightly. Add minced garlic to the griddle and sauté for 1–2 minutes.
  5. Sprinkle Parmesan over the chicken and cover for 2–3 minutes to melt.
  6. Remove from heat, let rest briefly, garnish if desired, and serve warm.

Notes

  • Pound chicken breasts to even thickness for more uniform cooking.
  • Freshly grated Parmesan melts and browns better than pre-shredded.
  • No griddle? A stovetop pan works just as well—just use a lid to help melt the cheese.
