Parsley Butter Potatoes with Garlic

These parsley butter potatoes are buttery, garlicky, and fresh with a simple parsley-garlic butter coating. Yukon Gold potatoes are boiled until tender, then tossed with fragrant garlic and herbs for a comforting side dish that pairs with almost any meal.

Ingredients
  

  • 2 lbs small Yukon Gold potatoes or red potatoes, cut into 1-inch pieces
  • 5 cloves garlic unpeeled
  • 3 tbsp butter
  • ΒΌ cup fresh parsley finely chopped
  • 1 tbsp kosher salt

Method
 

  1. Wash and cut potatoes into 1-inch chunks.
  2. Place in a pot, cover with cold water, and add salt.
  3. Bring to a boil, then simmer 18–20 minutes until fork-tender.
  4. Toast garlic cloves in a skillet over medium-high heat until browned, 5–7 minutes.
  5. Peel or press garlic through a garlic press.
  6. Melt butter, stir in garlic and parsley.

Notes

  • Use Yukon Gold or red potatoes for the best creamy texture.
