  • 5 oz arugula
  • 3 medium ripe peaches sliced
  • 1 cup blackberries
  • 1 avocado chopped
  • 2 cups cooked farro
  • ½ cup feta cheese
  • Chopped pecans optional
  • Honey Lime Dressing
  • Olive oil
  • Lime juice
  • Honey
  • Red wine vinegar
  • Minced shallot
  • Garlic salt, and pepper

Method
 

  1. In a large bowl, combine arugula, farro, peaches, blackberries, avocado, feta, and pecans.
  2. In a jar, whisk together olive oil, lime juice, honey, vinegar, shallot, garlic, salt, and pepper.
  3. Pour dressing over salad and toss gently.
