Peanut Butter Banana Bread

This loaf is everything you love about banana bread but with a peanut butter twist and gooey chunks of Reese’s throughout. It’s tender, flavorful, and bakes up beautifully in under an hour!

Ingredients
  

  • 2/3 cup smooth peanut butter
  • 1/2 cup butter softened
  • 2 tsp pure vanilla extract
  • 2/3 cup granulated sugar
  • 2/3 cup packed light brown sugar
  • 4 large eggs
  • 3 cups self-rising flour
  • 1/2 cup plain Greek yogurt
  • 4 small ripe bananas mashed (about 1 1/2 cups)
  • 1 1/2 to 2 cups chopped Reese’s cups

Method
 

  1. Preheat oven to 350°F. Grease or line two 9x5 or 8x4-inch loaf pans.
  2. Beat peanut butter, butter, and vanilla until fluffy.
  3. Add sugars and beat until well combined.
  4. Beat in eggs one at a time, then increase speed briefly.
  5. Gradually mix in flour and yogurt, beginning and ending with flour.
  6. Fold in mashed bananas and Reese’s by hand.

Notes

  • Use overripe bananas for best flavor and moisture.
  • If you don’t have self-rising flour, use all-purpose with 1 tbsp baking powder + ½ tsp salt per cup.
  • Reese’s Miniatures or full-sized cups work great when roughly chopped.
