Ingredients
  

FOR THE BREAD:
  • 3 ripe bananas mashed
  • 1/3 cup creamy peanut butter
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
FOR THE JELLY SWIRL:
  • 1/4 cup jelly or jam grape, strawberry, or your favorite flavor

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, mash bananas. Stir in peanut butter, sugar, melted butter, vanilla, and egg.
  3. In another bowl, whisk flour, baking soda, and salt.
  4. Add to wet mixture and mix until just combined.
  5. Pour half the batter into the pan. Dollop jelly on top and swirl gently.
  6. Add the remaining batter and repeat the jelly-swirl on top.

Notes

• Use super ripe bananas for the best flavor and moisture.
• Grape jelly gives that classic PB&J flavor, but feel free to use strawberry, raspberry, or even apricot.
