Pizza Rustica is a rich, savory Italian pie made with ricotta, mozzarella, parmesan, and a mix of Italian meats like ham, salami, and prosciutto. Wrapped in buttery pie crust and baked until golden, it's a delicious make-ahead dish for Easter or any celebratory meal.

Ingredients
  

  • 2 pie crusts for top and bottom
  • 2 cups ricotta cheese drained if watery
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • cups chopped Italian meats ham, salami, prosciutto
  • 3 large eggs
  • ¼ cup chopped parsley optional
  • 1 egg for egg wash

Method
 

  1. Preheat oven to 350°F. Roll out bottom crust and place in pie pan.
  2. In a bowl, mix ricotta, mozzarella, parmesan, meats, eggs, parsley, and pepper.
  3. Fill pie shell with mixture. Top with second crust. Seal edges and cut steam slits.
  4. Brush with egg wash. Bake 60–75 minutes until golden.
  5. Cool before slicing and enjoy warm or cold.

Notes

  • Make sure to drain ricotta well to avoid a soggy filling.
