Pizza Rustica is a traditional Italian Easter pie made with a flaky homemade crust and packed with a rich filling of ricotta, mozzarella, provolone, Parmesan, and Italian meats. It’s the perfect balance of creamy, salty, and satisfying—a showstopper for any holiday table.

Ingredients
  

For the Crust:
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 3 large eggs
  • 3 –4 tbsp ice water
For the Filling:
  • 2 cups ricotta cheese well drained
  • 1 ½ cups shredded mozzarella
  • 1 cup diced provolone
  • ½ cup grated Parmesan
  • 1 cup diced Italian meats prosciutto, salami, etc.
  • 4 large eggs
  • ½ tsp black pepper
  • 1 egg beaten (for egg wash)

Method
 

  1. Make crust and chill 30 minutes.
  2. Mix all filling ingredients in a large bowl.
  3. Roll bottom crust and line deep-dish pie pan.
  4. Fill with ricotta and meat mixture.
  5. Add top crust, seal edges, and cut vents.
  6. Brush with egg wash and bake at 350°F for 60–75 mins.

Notes

  • For the flakiest crust, keep all ingredients cold and avoid overworking the dough.
