This gyro bowl is fresh, flavorful, and simple to make. Tender marinated chicken is served over brown rice with crisp veggies, tangy olives, creamy tzatziki, and a sprinkle of feta. It’s a wholesome Mediterranean-inspired meal ready in under 30 minutes.

Ingredients
  

For the Marinade:
  • 2 tbsp olive oil
  • 3 tbsp Greek yogurt
  • 2 tbsp fresh lemon juice
  • 4 cloves garlic minced
  • tsp dried oregano
  • ½ tsp ground cumin
  • ½ tsp salt
  • ¼ tsp black pepper
For the Tzatziki:
  • cups plain Greek yogurt
  • 1 cup diced cucumber
  • tbsp fresh lemon juice
  • 1 tsp minced garlic
  • tsp chopped fresh dill
For the Rest of the Bowl:
  • 1 lb boneless skinless chicken breasts, diced
  • ½ cup cherry tomatoes halved
  • ¼ cup thinly sliced red onion
  • ¼ cup Kalamata olives pitted
  • 2 cups cooked brown rice
  • ¼ cup crumbled feta cheese

Method
 

  1. Mix marinade ingredients, coat chicken, and marinate 15 minutes.
  2. Heat oil in skillet and cook chicken until golden, 7–10 minutes.
  3. Mix tzatziki ingredients and chill.
  4. Prepare tomatoes, onion, and olives.
  5. Assemble bowls with rice, chicken, toppings, tzatziki, and feta.

Notes

  • Marinate chicken longer (up to overnight) for deeper flavor.
  • Swap brown rice with quinoa, couscous, or cauliflower rice.
