Ingredients
  

  • 8 oz ground beef
  • 1 cup broccoli florets chopped
  • 1 cup cooked quinoa
  • 3 garlic cloves minced
  • 1 ½ Tbsp tamari sauce
  • 2 spring onions chopped
  • 1 carrot chopped
  • 1 Tbsp olive oil
Optional:
  • Some crushed red pepper
  • 1 cup spinach chopped
  • 2 Tbsp cilantro chopped

Method
 

  1. Cook the ground beef in a large non-stick pan over medium to medium-high heat until nearly done.
  2. Add olive oil, garlic, and (if using) crushed red pepper.
  3. Sauté until fragrant.
  4. Stir in broccoli and cook for 2–3 minutes.
  5. Add tamari sauce, then stir in carrots, spring onions, and quinoa.
  6. Taste and adjust salt or add more tamari as needed.

Notes

  • Pre-cook quinoa ahead of time for quicker prep.
