Ingredients
  

  • 3 lbs red potatoes sliced into 1/4" rounds
  • 2 tbsp olive oil
  • 2 garlic cloves pressed
  • 1 lb kielbasa sausage sliced into 3/4" pieces
  • 2 tbsp chopped fresh parsley or 1/2 tbsp dried
  • 1 tsp sea salt

Method
 

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Toss sliced potatoes and kielbasa with oil, garlic, parsley, and salt.
  3. Spread on baking sheet in a single layer.
  4. Roast 40–45 minutes, flipping halfway through.
  5. Serve hot, garnished with more parsley if desired.

Notes

• You can substitute yellow or Yukon gold potatoes if red potatoes aren’t available.
• Feel free to use turkey kielbasa or smoked sausage for a lighter option.
• Add chopped bell peppers or onions for extra flavor and color.
