Sautéed Mushrooms with Spinach

A quick and flavorful side dish made with garlicky mushrooms and tender spinach. Perfect alongside pasta, steak, or chicken.

Ingredients
  

  • 4 cups fresh spinach
  • 2 cups fresh mushrooms sliced, cremini or button
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • Salt to taste
  • Black pepper to taste
  • Lemon juice optional
  • Grated Parmesan cheese optional

Method
 

  1. Rinse and dry spinach. Slice mushrooms and mince garlic.
  2. Heat olive oil in skillet over medium heat.
  3. Add garlic and cook 30 seconds until fragrant.
  4. Stir in mushrooms; cook 5–7 minutes until golden.
  5. Season with salt and pepper.
  6. Add spinach; sauté 2–3 minutes until wilted.
  7. Toss well, finish with lemon juice or Parmesan if desired.

Notes

  • For extra flavor, deglaze the pan with a splash of white wine or balsamic vinegar before adding the spinach.
  • Try mixing in red pepper flakes for a little heat.
  • Works well as a topping for risotto, baked potatoes, or crostini.
