This shrimp scampi pasta bake is a flavor-packed twist on a classic. Ingredients
  

  • 1 lb medium or large shrimp peeled and deveined
  • 12 oz pasta penne, rotini, etc.
  • 4 tbsp butter
  • 4 cloves garlic minced
  • Juice and zest of 1 lemon
  • 1/2 cup dry white wine or chicken broth
  • Salt and pepper to taste
  • Pinch of red pepper flakes optional
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley chopped (for garnish)

Method
 

  1. Cook pasta al dente. Drain and set aside.
  2. Sauté garlic in butter and oil, add shrimp, cook until pink.
  3. Remove shrimp. Add lemon juice, zest, wine, seasoning.
  4. Toss pasta in sauce. Stir in shrimp, mozzarella, and half the Parmesan.
  5. Transfer to baking dish. Top with remaining cheese.
  6. Bake at 375°F for 15–20 minutes until bubbly.

Notes

  • Don’t overcook the shrimp — they’ll finish cooking slightly in the oven.
  • Use freshly squeezed lemon juice for the brightest flavor.
