Method
- Preheat oven to 375°F (190°C). Coat a 9x13 baking dish with cooking spray.
- Mix sour cream with ½ cup Parmesan, cornstarch, salt, pepper, oregano, basil, and garlic powder.
- Lay chicken breasts in dish, top with mozzarella.
- Smother with sour cream mixture, sprinkle with remaining Parmesan.
- Bake uncovered 45–60 minutes, until chicken is cooked through.
- Top with parsley and serve over rice.
