Ingredients
  

  • 4 boneless skinless chicken breasts
  • 4 slices mozzarella cheese
  • 1 cup sour cream
  • ½ cup Parmesan cheese grated
  • 1 tablespoon corn starch
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt freshly ground
  • ½ teaspoon pepper freshly ground
  • ¼ cup Parmesan cheese grated
  • Parsley chopped, for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Coat a 9x13 baking dish with cooking spray.
  2. Mix sour cream with ½ cup Parmesan, cornstarch, salt, pepper, oregano, basil, and garlic powder.
  3. Lay chicken breasts in dish, top with mozzarella.
  4. Smother with sour cream mixture, sprinkle with remaining Parmesan.
  5. Bake uncovered 45–60 minutes, until chicken is cooked through.
  6. Top with parsley and serve over rice.
