Ingredients
  

  • 4 cod fillets 5–6 oz each
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • teaspoons fresh grated ginger
  • 2 cloves garlic minced
  • 1 teaspoon cornstarch + 1 tablespoon water optional, for glaze
  • Green onions and sesame seeds for garnish
  • Optional: red pepper flakes or sriracha to taste

Method
 

  1. In a bowl, whisk soy sauce, sesame oil, honey, rice vinegar, garlic, and ginger to make the marinade.
  2. Place cod in a shallow dish or zip-top bag.
  3. Pour marinade over and let sit for 15–30 minutes.
  4. To bake: Preheat oven to 400°F.
  5. Place cod on parchment-lined baking dish and bake for 12–15 minutes, until it flakes easily.
  6. To pan-sear: Heat a bit of oil in a skillet.

Notes

  • Salmon, halibut, or tilapia can be swapped for cod.
  • For a spicier kick, add sriracha directly into the marinade.
