Ingredients
  

  • 12 oz spaghetti
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • ½ cup sun-dried tomatoes chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Crushed red pepper flakes optional

Method
 

  1. Cook spaghetti until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and sauté garlic for 1 minute.
  3. Add sun-dried tomatoes and spinach; cook until wilted.
  4. Pour in heavy cream, bring to a simmer, then stir in Parmesan until creamy.
  5. Toss pasta in sauce, season, and serve with extra Parmesan.
