Ingredients
  

  • 1 lb cauliflower florets bite-sized
  • 1 lb extra lean ground beef
  • 1 ½ tbsp olive oil divided
  • ¼ cup tomato paste double or triple concentrated preferred
  • 2 tbsp honey
  • 2 tbsp chili crunch
  • 2 tbsp soy sauce or coconut aminos
  • 2 tbsp black vinegar or rice vinegar
  • cup water
  • 4 scallions sliced (whites and greens separated)

Method
 

  1. Mix tomato paste, chili crunch, honey, soy sauce, vinegar, water, and scallion whites in a bowl; set aside.
  2. Heat 1 tbsp olive oil over medium-high heat in a skillet.
  3. Add cauliflower; cook 4-5 mins until browned.
  4. Transfer to bowl and cover to steam.
  5. Add remaining oil; cook ground beef until browned with crust.
  6. Break apart to finish cooking.

Notes

• Use pre-cut cauliflower florets to save prep time.
• For extra spice, add more chili crunch or a pinch of red pepper flakes.
