- Whisk together all sauce ingredients until smooth.
- In a large skillet, heat olive oil. Brown ground beef until no longer pink.

- Add bell pepper and carrots, cook for 3–4 minutes until tender.
- Pour in sauce, stir, and simmer until slightly thickened, 2–3 minutes. Season to taste.

Notes
• Coconut aminos give a sweeter, less salty flavor than soy sauce.
• Use iceberg lettuce for extra crunch if Bibb isn’t available.
