Sweet & Savory Ground Beef Lettuce Wraps

These ground beef lettuce wraps are bold, satisfying, and naturally gluten-free. With crisp veggies, aromatic garlic and ginger, and a sticky-sweet sesame glaze, they’re ready in under 30 minutes. Serve them with rice or as-is for a low-carb dinner everyone loves.

Ingredients
  

Lettuce Wrap Sauce:
  • ¼ cup maple syrup brown sugar, or coconut sugar
  • ¼ cup coconut aminos tamari, or soy sauce
  • 2 teaspoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • ¼ – ½ teaspoon red pepper flakes optional
  • 2 teaspoon arrowroot powder or cornstarch
Ground Beef Filling:
  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 2 cloves garlic minced
  • 2 teaspoon grated fresh ginger
  • 1 medium red bell pepper finely diced
  • ½ cup shredded carrots
  • 4 whole green onions sliced into 1” pieces
  • Kosher salt to taste
  • Ground black pepper to taste
  • Sesame seeds for garnish
  • Boston Bibb lettuce
  • Steamed white rice or cauliflower rice optional

Method
 

  1. Whisk together all sauce ingredients until smooth.
  2. In a large skillet, heat olive oil. Brown ground beef until no longer pink.
  3. Add garlic and ginger, cook for 1–2 minutes until fragrant.
  4. Add bell pepper and carrots, cook for 3–4 minutes until tender.
  5. Pour in sauce, stir, and simmer until slightly thickened, 2–3 minutes. Season to taste.
  6. Stir in green onions.

Notes

• Coconut aminos give a sweeter, less salty flavor than soy sauce.
• Use iceberg lettuce for extra crunch if Bibb isn’t available.
• To make it spicier, add more red pepper flakes or a squirt of sriracha.
