This taco meatloaf brings a Tex-Mex twist to the classic comfort dish. Packed with taco seasoning, salsa, and melty cheese, it’s flavorful, juicy, and perfect for an easy family dinner.

Ingredients
  

  • 6 oz corn chips
  • 2 lbs lean ground beef
  • 2 large eggs
  • 1 ½ cups corn and black bean salsa or chunky salsa
  • 1 oz taco seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 cups shredded Mexican cheese blend

Method
 

  1. Crush corn chips in a bag with a rolling pin.
  2. In a large bowl, mix ground beef, eggs, and crushed chips.
  3. Add salsa, taco seasoning, salt, pepper, and garlic powder. Mix well.
  4. Stir in shredded cheese.
  5. Line a loaf pan with foil, spray with cooking spray, and press mixture inside.
  6. Spread salsa over the top.
  7. Bake at 375°F (190°C) for 40 minutes.

Notes

  • Avoid overmixing the meat mixture—this keeps the loaf tender.
  • For extra spice, add diced jalapeños or a pinch of cayenne.
