Teriyaki Beef and Broccoli Bowl

This Teriyaki Beef and Broccoli Bowl is a weeknight winner, featuring savory ground beef coated in rich teriyaki sauce, pan-seared broccoli, and a creamy chili mayo drizzle. It’s sweet, garlicky, slightly spicy, and absolutely addictive with rice or cauliflower rice.

Ingredients
  

  • 2 Tablespoons olive oil divided
  • 12 oz broccoli florets
  • 1 pound ground beef*
  • 1 " piece ginger minced (optional)
  • 2 cloves garlic minced (optional)
  • 1 cup teriyaki sauce
For the Sauce
  • ¼ cup 60g light mayo
  • Tablespoon 23g sriracha or chili garlic sauce
  • 1 Tablespoon 21g honey
  • 1 Tablespoon 15g rice vinegar
  • ½ teaspoon garlic powder
For Serving
  • Cooked rice or cauliflower rice
  • Toasted sesame seeds
  • Scallions thinly sliced

Method
 

  1. In a small bowl, mix mayo, sriracha, honey, vinegar, and garlic powder. Set aside.
  2. Heat 1 tablespoon oil in a skillet.
  3. Add broccoli and sear 2–3 minutes per side until browned. Remove.
  4. Add ½ tablespoon oil and ground beef.
  5. Brown, then break apart and cook through.
  6. Push beef aside, add remaining oil, garlic, and ginger.
  7. Sauté until fragrant. Mix with beef.

Notes

• Swap ground beef for ground turkey or tofu for a lighter twist.
• Make it gluten-free by using tamari-based teriyaki sauce.
• Adjust sriracha in the mayo to control heat.
