Ingredients
  

  • 1 tablespoon sesame oil
  • ¼ cup diced onion
  • 2 cloves garlic minced
  • 1 tablespoon fresh minced ginger
  • 10 oz ground chicken
  • ¼ cup tamari or soy sauce
  • 2 tablespoons Thai sweet red chili sauce
  • Juice of 1 lime
  • 1 teaspoon maple syrup or honey
  • cup chopped cashews
  • ¼ cup chopped scallions
  • ¼ cup chopped fresh cilantro
  • ¼ –½ cup shredded carrots
  • Sesame seeds optional, for topping
  • 1 head butter lettuce

Method
 

  1. Heat sesame oil in a pan over medium-high heat.
  2. Add diced onion and cook for 2-3 minutes until translucent.
  3. Stir in minced garlic and ginger, cooking for an additional 2 minutes.
  4. Add ground chicken, season with salt and pepper, and cook until browned and cooked through, about 3-4 minutes.
  5. In a small bowl, whisk together tamari or soy sauce, Thai sweet red chili sauce, lime juice, and maple syrup or honey.

Notes

• Butter lettuce is preferred for its softness and flexibility, but romaine also works.
• You can swap ground chicken for ground turkey or plant-based crumbles.
• Add chopped red chili or sriracha for a spicy kick.
