Ingredients
  

  • 6 egg yolks

  • 2 tsp vanilla extract
  • cups heavy whipping cream
  • 2 cups cold espresso
  • 1/4 cup Kahlua optional
  • 40 –45 ladyfingers
  • 1/4 cup unsweetened cocoa powder

Method
 

  1. Whisk yolks, sugar, and salt over simmering water for 10–13 minutes (165°F).
  2. Cool for 10 minutes.
  3. Whisk in mascarpone and vanilla until smooth.
  4. Beat cream to stiff peaks and fold into mascarpone mixture.
  5. Combine espresso and Kahlua.
  6. Dip ladyfingers quickly and layer in a 9x13 pan.
  7. Spread half the mascarpone, repeat with second layer.
