Ingredients
  

  • 3 cups cubed seedless watermelon
  • 1 medium red onion thinly sliced
  • 2 cups mini cucumbers thinly sliced
  • 1 cup crumbled feta cheese
  • ½ cup olive oil
  • ¼ cup lime juice
  • ¼ cup honey
  • 1 teaspoon Tajin seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Chopped fresh mint for garnish (optional)

Method
 

  1. In a large bowl, combine watermelon, red onion, cucumbers, and feta cheese.
  2. In a small bowl, whisk olive oil, lime juice, honey, Tajin, salt, and pepper until smooth.
  3. Adjust seasoning as needed.
  4. Pour the dressing over the salad and toss gently until everything is coated.
  5. Garnish with mint leaves if desired. Serve immediately.
