Ingredients
  

  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 5 large tortillas
  • 1 ½ cups cooked rice Spanish, cilantro-lime, or white rice
  • 1 15 oz can refried beans
  • 2 cups shredded cheddar cheese divided
  • 1 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • ½ cup beef broth
  • 1 28 oz can enchilada sauce
  • 1 tsp chili powder

Method
 

  1. Preheat oven to 350°F.
  2. Cook beef in skillet until browned. Drain fat, then add taco seasoning + water.
  3. In saucepan, melt butter, whisk in flour, then slowly add beef broth and enchilada sauce.
  4. Stir in chili powder, simmer until thickened.
  5. Fill tortillas with rice, beans, beef, and cheese.
  6. Roll tightly, seam side down in a greased baking dish.
  7. Pour sauce over burritos, sprinkle with remaining cheese.
