Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 1 cup black beans rinsed and drained
  • 1 cup corn frozen or canned
  • 1 red bell pepper diced
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Method
 

  1. In a small bowl, whisk Greek yogurt, mayonnaise, lime juice, chili powder, cumin, salt, and pepper until smooth.
  2. In a large mixing bowl, combine chicken, black beans, corn, red bell pepper, red onion, cherry tomatoes, avocado, and cilantro.
  3. Pour dressing over salad and toss gently to coat.
  4. Top with cheese and tortilla strips if desired. Serve immediately or refrigerate until ready.

Notes

  • For extra flavor, roast the corn before adding it to the salad.
